  • 1/4 cup baking soda
  • 2 tablespoons unsalted butter, melted
  • Coarse salt for topping

Instructions

  1. Activate the Yeast: In a large mixing bowl, combine 1 cup of warm water, 2 teaspoons of granulated sugar, and 2 1/4 teaspoons of active dry yeast. Let it sit for 5-10 minutes until foamy.
  2. Make the Dough: Add 3 cups of all-purpose flour, 1 teaspoon of salt, and the yeast mixture to a bowl. Mix until a rough dough forms, then knead for 8-10 minutes until smooth and elastic.
  3. Let It Rise: Place the dough in a greased bowl, cover with a clean towel, and let it rise for about 1 hour, or until doubled in size.
  4. Shape the Rolls: Divide the dough into 16 equal pieces and roll each piece into a ball. Arrange them close together on a greased baking sheet.
  5. Prepare the Baking Soda Bath: Bring 4 cups of water and 1/4 cup of baking soda to a boil. Carefully dip each dough ball into the boiling water for 30 seconds, then place it back on the baking sheet.
  6. Add Toppings: Brush each roll with melted butter and sprinkle with coarse salt.
  7. Bake: Preheat your oven to 425°F (220°C) and bake the rolls for 12-15 minutes, or until golden brown.
