  • 2 pounds beef chuck roast, cut into 1-inch cubes
  • 2 medium turnips, peeled and chopped into chunks
  • 8 ounces cremini mushrooms, sliced
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 4 cups low sodium beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil, for browning beef
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Pat the beef chuck cubes dry with paper towels and season lightly with salt and pepper.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Brown the beef cubes in batches for 2-3 minutes per side until a rich crust forms. Transfer browned beef to the slow cooker.
  3. In the same skillet, sauté diced onion for 3-4 minutes until softened and translucent. Add minced garlic and cook for 30 seconds until fragrant. Transfer to the slow cooker.
  4. Add chopped turnips and sliced mushrooms to the slow cooker with the beef and onions.
  5. In a bowl, whisk together beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Pour over the ingredients in the slow cooker.
  6. Nestle the bay leaf into the stew.
  7. Cover and cook on low for 6-8 hours, or until beef is fork-tender and vegetables are soft. Avoid lifting the lid during cooking.
  8. About 30 minutes before serving, taste and adjust salt and pepper as needed. Remove the bay leaf.
  9. Garnish with fresh chopped parsley before serving.

Notes

If the stew is too thin, mix 1 tablespoon almond flour or xanthan gum with cold water and stir into the stew. Cook for another 15 minutes to thicken. Browning the beef before slow cooking is essential for flavor. Avoid lifting the slow cooker lid during cooking to retain moisture and heat.
