Healthy Turkey White Bean Chili – Easy & Freezer-Friendly

A hearty, healthy turkey chili with creamy white beans and smoky spices that comes together in about 45 minutes. Perfect for meal prep and freezer-friendly, this comforting bowl is lighter but still deeply satisfying.

  • 1 large yellow onion, diced (about 1 ½ cups)
  • 3 cloves garlic, minced
  • 1 ½ pounds lean ground turkey (93/7 works best)
  • 1 medium jalapeño, seeded and minced (optional, for heat)
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili powder (adjust to taste)
  • ½ teaspoon kosher salt, plus more to taste
  • ¼ teaspoon black pepper
  • 2 cans (15 ounces each) cannellini beans or great northern beans, drained and rinsed
  • 1 can (14.5 ounces) fire-roasted diced tomatoes
  • 1 can (4 ounces) diced green chiles, mild
  • 3 cups low-sodium chicken broth (or vegetable broth for a vegetarian version)
  • 1 bay leaf
  • Fresh cilantro, chopped (for serving)
  • Lime wedges (for serving)
  • Shredded sharp cheddar cheese (for serving)
  • Sour cream or Greek yogurt (for serving)
  • Avocado slices (for serving)
  • Crushed tortilla chips (for serving)

Instructions

  1. Heat the oil. Place your Dutch oven or pot over medium heat. Add the olive oil and let it warm up for about 30 seconds until it shimmers.
  2. Sauté the aromatics. Add the diced onion and cook, stirring occasionally, for 4-5 minutes until it turns translucent and starts to soften. Add the minced garlic and cook for another 30 seconds until fragrant—don’t let it burn.
  3. Brown the turkey. Add the ground turkey to the pot. Break it up with your wooden spoon into small crumbles. Cook for 5-7 minutes, stirring occasionally, until the turkey is no longer pink. If you’re using the jalapeño, add it now.
  4. Toast the spices. Sprinkle the cumin, oregano, smoked paprika, chili powder, salt, and pepper over the turkey. Stir well and cook for 1 minute.
  5. Add the liquids and beans. Pour in the fire-roasted tomatoes (with their juices), the diced green chiles, and the drained and rinsed white beans. Stir everything together. Then pour in the chicken broth and drop in the bay leaf. Give it a good stir to combine.
  6. Bring to a simmer. Turn the heat up to medium-high and bring the chili to a gentle boil. Immediately reduce the heat to low, so the chili is at a steady simmer. Cover the pot with the lid slightly ajar.
  7. Simmer and develop flavor. Let the chili simmer for 25-30 minutes. Stir it occasionally to prevent sticking. Taste the broth after 20 minutes and adjust salt or spices to your liking.
  8. Finish and rest. Remove the bay leaf and discard it. Turn off the heat and let the chili sit in the pot for 5 minutes before serving.
  9. Serve. Ladle the chili into bowls. Top with fresh cilantro, a squeeze of lime juice, shredded cheese, a dollop of sour cream or Greek yogurt, and avocado slices if you like. Crushed tortilla chips add a wonderful crunch.

Notes

Don’t skip the spice toasting step—it wakes up the essential oils and makes the flavors bloom. Rinse the beans to remove excess sodium and metallic taste. Let the chili rest off the heat for 5-10 minutes before serving for better flavor melding. For a thicker chili, simmer uncovered for an extra 10-15 minutes or mash some beans against the pot. For a thinner chili, add extra broth. If the chili tastes flat, add a squeeze of lime juice or a pinch more salt.
