  • 4 medium zucchinis, spiralized into noodles (about 6 cups)
  • 4 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons unsalted butter, softened
  • 1/4 cup dry white wine (optional)
  • 2 tablespoons fresh lemon juice (from 1 lemon)
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste
  • Parmesan cheese for sprinkling (optional)

Instructions

  1. Wash and dry the zucchinis. Use a spiralizer to create noodles, aiming for uniform thickness. Place them in a colander, sprinkle lightly with salt, and let sit for 10 minutes to draw out excess moisture.
  2. After 10 minutes, gently squeeze the noodles in a clean kitchen towel or paper towels to remove any remaining water to prevent sogginess.
  3. Rinse shrimp under cold water and pat dry with paper towels. Season lightly with salt and pepper.
  4. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add shrimp in a single layer and cook for 2-3 minutes per side until pink and opaque. Remove shrimp to a plate and set aside.
  5. Lower heat to medium and add remaining 1 tablespoon olive oil and butter to the skillet. Once butter melts, add minced garlic and red pepper flakes. Sauté for about 1 minute until fragrant but not browned.
  6. Carefully pour in the white wine and lemon juice. Let it simmer gently for 2-3 minutes to reduce slightly and meld flavors.
  7. Add zucchini noodles to the skillet and toss gently with tongs or a large spoon for 2-3 minutes until noodles are warmed but still have a bit of bite. Avoid overcooking to keep texture.
  8. Add the cooked shrimp back to the pan and toss everything together for another minute to combine flavors and heat through.
  9. Taste and adjust salt and pepper. Remove from heat, sprinkle chopped fresh parsley on top, and serve immediately. Optionally, add a sprinkle of Parmesan cheese if desired.

Notes

Keep an eye on the garlic to avoid burning. Dry zucchini noodles thoroughly before cooking to prevent sogginess. Use a good non-stick skillet for even cooking. White wine is optional and can be substituted with chicken broth or water with lemon. Serve immediately for best texture.
