  • 1/2 cup creamy peanut butter (125g)
  • 2 tablespoons powdered sugar (optional, for peanut butter swirl)

Instructions

  1. Preheat your oven to 350°F (175°C). Place your 10-inch cast iron skillet on the stove over low heat to warm slightly (about 3 minutes) then remove from heat.
  2. Melt the butter in a small saucepan or microwave-safe bowl until fully liquid. Let it cool slightly (about 2 minutes).
  3. In a mixing bowl, combine granulated sugar, brown sugar, and melted butter. Stir until smooth and glossy, about 1-2 minutes.
  4. Add eggs one at a time, stirring vigorously after each addition. Stir in vanilla extract until the batter is thick and creamy.
  5. In a separate bowl, sift together flour, cocoa powder, salt, and espresso powder (if using).
  6. Gradually fold the dry ingredients into the wet mixture using a rubber spatula. Stir just until no flour streaks remain; do not overmix.
  7. Pour the batter into the warmed cast iron skillet, spreading evenly.
  8. In a small bowl, mix peanut butter with powdered sugar until smooth (optional). Dollop spoonfuls evenly over the brownie batter.
  9. Use a fork or toothpick to gently swirl the peanut butter into the batter to create a marbled effect.
  10. Bake on the middle rack for 25-28 minutes until edges are set and slightly pulling away, and a toothpick near the edge comes out with moist crumbs.
  11. Cool the skillet on a wire rack for at least 15 minutes before serving. Serve warm, optionally with vanilla ice cream or whipped cream.

Notes

If peanut butter is too thick to swirl, microwave for 10-15 seconds to loosen. Avoid overmixing batter to keep brownies fudgy. Check brownies a few minutes before baking time as ovens vary. Slightly underbaked center is ideal. For gluten-free, substitute almond flour. For vegan, use coconut oil, flax eggs, and dairy-free peanut butter.
