  • 1/2 cup (50g) unsweetened cocoa powder (natural preferred)
  • 1 teaspoon espresso powder (optional)
  • 1/4 teaspoon salt
  • Flaky sea salt for sprinkling on top

Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking pan with parchment paper, leaving an overhang on the sides for easy removal later.
  2. Melt the unsalted butter in your mixing bowl using the microwave or stove until fully liquid. Let it cool slightly so it’s warm but not hot.
  3. Stir in the granulated sugar and brown sugar until combined and glossy.
  4. Add the eggs one at a time, whisking well after each addition. Then add the vanilla extract and mix until smooth and glossy.
  5. In a separate small bowl, whisk together the all-purpose flour, cocoa powder, espresso powder (if using), and salt.
  6. Gradually fold the dry ingredients into the wet mixture with a spatula until just combined. Do not overmix.
  7. Pour the batter into the prepared pan and smooth the top evenly.
  8. Sprinkle flaky sea salt generously over the top.
  9. Bake for 20-25 minutes. Check at 20 minutes by inserting a toothpick in the center; it should come out with a few moist crumbs but no wet batter.
  10. Cool completely in the pan on a wire rack for at least 30 minutes before slicing.

Do not overmix the batter to avoid cakey brownies. Use flaky sea salt for the best texture and flavor contrast. Let brownies cool completely before slicing for clean cuts and fudgy texture.
