A refreshing and easy-to-make summer salad combining sweet watermelon, creamy feta, fresh mint, and a zesty lime dressing. Perfect for a light lunch or a crowd-pleasing side dish.

  • 4 cups watermelon, cubed (seedless if possible)
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, finely chopped
  • Juice of 1 large lime (about 2 tablespoons)
  • 2 tablespoons extra virgin olive oil (optional)
  • Pinch of sea salt
  • Freshly ground black pepper (optional)

Instructions

  1. Cut off the rind and slice the watermelon into roughly 1-inch cubes (about 4 cups).
  2. Crumble 1 cup of feta cheese by hand into small pieces.
  3. Rinse and dry 1/4 cup of fresh mint leaves, then chop finely.
  4. In a small bowl, whisk together the juice of one large lime, 2 tablespoons of extra virgin olive oil, a pinch of sea salt, and a light sprinkle of freshly ground black pepper if desired.
  5. In a large mixing bowl, combine the watermelon cubes, crumbled feta, and chopped mint.
  6. Drizzle the lime dressing over the salad and toss gently with a spoon or spatula to coat without bruising the watermelon.
  7. Taste and adjust seasoning with more salt or lime juice if needed. Add a tiny drizzle of olive oil for extra richness if desired.
  8. Optionally, chill the salad in the fridge for 10-15 minutes before serving to let flavors meld.

Notes

Use firm, ripe watermelon for best texture and sweetness. Crumble feta by hand for creamier texture. Toss gently to avoid breaking watermelon cubes. Freshly squeezed lime juice is preferred over bottled. Olive oil is optional but adds richness. For vegan version, substitute feta with marinated tofu or vegan cheese. Store leftovers in airtight container and drain excess liquid before serving.
