Fresh Watermelon Feta Salad with Mint and Balsamic Glaze

A quick and refreshing summer salad combining juicy watermelon, tangy feta cheese, fresh mint, and a sweet balsamic glaze. Perfect for warm weather gatherings and easy to prepare in under 15 minutes.

  • 4 cups watermelon, cubed (about 1 small seedless watermelon)
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, roughly chopped
  • 2 tablespoons extra virgin olive oil
  • 1/4 cup balsamic vinegar
  • 1 tablespoon honey or maple syrup
  • Pinch of sea salt
  • Freshly ground black pepper, a few grinds (optional)

Instructions

  1. Prepare the watermelon by cutting it into 4 cups of bite-sized cubes (about 1-inch pieces). Remove any seeds if necessary.
  2. Make the balsamic glaze by pouring 1/4 cup balsamic vinegar into a small saucepan. Add 1 tablespoon honey or maple syrup. Heat over medium heat, stirring occasionally, and simmer gently for 8-10 minutes until reduced by half and syrupy. Remove from heat and let cool slightly.
  3. Roughly chop 1/4 cup fresh mint leaves while the glaze is reducing.
  4. In a large mixing bowl, gently toss together the watermelon cubes, crumbled feta cheese, and chopped mint.
  5. Drizzle 2 tablespoons extra virgin olive oil over the salad, add a pinch of sea salt and a few grinds of black pepper if using. Toss lightly to combine.
  6. Transfer the salad to a serving dish and drizzle the cooled balsamic glaze evenly over the top.
  7. Serve immediately for best freshness or chill for up to 30 minutes before serving.

Notes

Pat watermelon cubes dry with paper towels if watery to prevent sogginess. Use firm feta for best texture. Add mint just before serving to keep it fresh. Watch balsamic glaze carefully to avoid burning. Can substitute vegan cheese or tofu for dairy-free option.
