  • 4 cups firm, seedless watermelon, cut into 1-inch cubes
  • 1 cup feta cheese, crumbled by hand
  • 20 fresh mint leaves, washed and patted dry
  • 1 tablespoon extra virgin olive oil
  • Pinch of freshly ground black pepper
  • Optional: 1 teaspoon balsamic glaze or reduction per serving

Instructions

  1. Rinse the watermelon under cool water. Using a sharp chef’s knife, cut the watermelon into 1-inch cubes (about 4 cups). Place the cubes in a medium mixing bowl.
  2. Crumble about 1 cup of feta cheese by hand. Gently fold the feta into the watermelon cubes, being careful not to mash the fruit.
  3. Rinse about 20 fresh mint leaves and pat dry with paper towels. Tear larger leaves into halves if needed to create bite-sized pieces.
  4. On a serving platter, place a watermelon cube, then add a small pinch of crumbled feta on top, followed by a fresh mint leaf. Repeat until all cubes are topped.
  5. Drizzle about 1 tablespoon of extra virgin olive oil evenly over the bites. Finish with a light sprinkle of freshly ground black pepper. If using, drizzle balsamic glaze on each bite.
  6. Serve immediately or chill in the refrigerator for 15-30 minutes for extra refreshment. Avoid leaving too long to prevent watermelon from releasing too much juice.

Notes

Use firm, seedless watermelon for best texture. Crumble feta by hand for a rustic feel. Assemble shortly before serving to avoid sogginess. Optional balsamic glaze adds tangy contrast. For dairy-free, substitute feta with firm vegan cheese or marinated tofu. Mint can be replaced with basil or cilantro for variation.
