These Fresh Tropical Mango Pineapple Shrimp Skewers with Coconut Lime Glaze offer a juicy, vibrant, and tropical flavor perfect for quick weeknight meals or summer gatherings. The coconut lime glaze adds a bright, tangy, and creamy finish that complements the sweet fruit and tender shrimp.

Ingredients

Scale
  • 1 pound large raw shrimp, peeled and deveined
  • 1 large ripe mango, peeled and cut into 1-inch cubes
  • 1 cup fresh pineapple chunks
  • ½ cup full-fat canned coconut milk
  • Juice of 2 fresh limes (about ¼ cup)
  • 2 tablespoons honey (or maple syrup for vegan option)
  • 2 cloves garlic, minced
  • 2 tablespoons fresh cilantro, chopped (optional)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Wooden skewers soaked in water for 30 minutes (or metal skewers)

Instructions

  1. Rinse and pat dry the shrimp. Place in a mixing bowl, season with salt and pepper, and drizzle with olive oil. Toss gently to coat.
  2. Peel and cube the mango and chop the pineapple into 1-inch chunks, keeping pieces uniform.
  3. In a small bowl, whisk together coconut milk, lime juice, honey, and minced garlic until smooth and slightly thickened. Adjust sweetness or lime to taste.
  4. Thread shrimp, mango, and pineapple onto soaked wooden skewers, alternating pieces. Aim for 3 shrimp and 3 fruit chunks per skewer.
  5. Preheat grill or grill pan to medium-high heat (about 400°F). Brush grill grates or pan with oil to prevent sticking.
  6. Grill skewers for 2-3 minutes per side. Brush with coconut lime glaze during the last minute of grilling. Shrimp should be opaque and slightly charred; fruit should have grill marks but remain firm.
  7. Serve immediately, drizzle with remaining glaze, and sprinkle with chopped cilantro if desired.

Notes

Soak wooden skewers in water for at least 30 minutes before grilling to prevent burning. Apply the coconut lime glaze during the last minute of grilling to avoid burning the sugars. Watch shrimp carefully to avoid overcooking and rubbery texture. Leftovers can be stored in the refrigerator for up to 2 days and reheated gently in a skillet or under a broiler.
