  • 1 medium ripe banana, sliced into thin rounds
  • 2 tablespoons (30 ml) honey (or maple syrup for vegan option)
  • 2 tablespoons (30 g) rainbow sprinkles
  • 1 teaspoon (5 ml) vanilla extract
  • Pinch of sea salt

Instructions

  1. Prep your fruit: Wash and hull the strawberries, then slice them thinly. Peel and slice the banana into rounds about 1/4 inch (6 mm) thick. Set aside.
  2. Mix the yogurt base: In a medium bowl, combine 2 cups (475 ml) of Greek yogurt with 2 tablespoons (30 ml) honey, 1 teaspoon (5 ml) vanilla extract, and a pinch of sea salt. Stir until smooth and well blended. Taste and adjust sweetness if needed.
  3. Line your tray: Place parchment paper or a silicone mat on your baking sheet or rimmed tray to prevent sticking.
  4. Spread the yogurt: Pour the yogurt mixture onto the lined tray and spread it evenly into a roughly 1/4-inch (6 mm) thick layer using a spatula.
  5. Add fruit and sprinkles: Scatter the sliced strawberries and bananas evenly over the yogurt. Then sprinkle the rainbow sprinkles generously on top. Press down gently so the toppings stick into the yogurt but don’t submerge them.
  6. Freeze: Place the tray in the freezer for a minimum of 4 hours, or until completely firm and set.
  7. Break and serve: Once frozen solid, lift the bark out using the parchment paper. Break it into irregular pieces by hand or with a knife. Serve immediately or store in an airtight container in the freezer.
