A quick and easy summer salad combining sweet ripe peaches, creamy burrata cheese, fresh basil, and a drizzle of olive oil and balsamic glaze for a fresh, flavorful dish perfect for warm days.

Ingredients

Scale
  • 2 fresh ripe peaches, thinly sliced
  • 1 ball of creamy burrata cheese
  • Fresh basil leaves
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic glaze or reduction
  • Sea salt, to taste
  • Freshly cracked black pepper, to taste
  • Optional: 2 tablespoons toasted pine nuts or slivered almonds

Instructions

  1. Wash and dry the peaches gently under cool water.
  2. Slice the peaches into thin wedges about 1/4 inch thick, removing the pit carefully.
  3. Remove burrata from packaging and tear into bite-sized pieces or gently slice.
  4. Arrange peach slices and burrata pieces alternately on a serving platter.
  5. Tuck fresh basil leaves between the peach and burrata slices.
  6. Drizzle extra virgin olive oil evenly over the salad.
  7. Drizzle balsamic glaze artistically over the salad.
  8. Season with flaky sea salt and freshly cracked black pepper.
  9. Optional: Scatter toasted pine nuts or slivered almonds on top for added texture.

Notes

Use ripe but firm peaches for best texture. If prepping ahead, toss peach slices with lemon juice to prevent browning and add burrata and basil just before serving. For a smoky twist, grill peach slices lightly. Substitute burrata with fresh mozzarella or vegan cheese if desired. Toast nuts carefully to avoid burning.
