A refreshing and texturally delightful salad featuring creamy burrata cheese paired with juicy nectarines, fresh basil, and a drizzle of olive oil. Perfect for a quick, elegant appetizer or side dish.

Ingredients

Scale
  • 3 medium fresh nectarines, ripe but firm
  • 1 ball (8 ounces) creamy burrata cheese
  • A handful of fresh basil leaves
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon fresh lemon juice (optional)
  • Flaky sea salt, to taste
  • Freshly cracked black pepper, to taste

Instructions

  1. Wash and dry the nectarines thoroughly.
  2. Slice nectarines into thin wedges about 1/4 inch thick.
  3. Optional: Toss sliced nectarines with 1 teaspoon fresh lemon juice in a small bowl.
  4. Arrange nectarine slices on a serving platter in a single or overlapping layer.
  5. Gently tear the burrata into rustic chunks, keeping some creamy interior intact, and place evenly over nectarines.
  6. Tuck fresh basil leaves between nectarines and burrata pieces.
  7. Drizzle 2 tablespoons of extra virgin olive oil evenly over the salad.
  8. Sprinkle flaky sea salt and freshly cracked black pepper over the entire salad.
  9. Let the salad sit at room temperature for 5 minutes before serving to allow flavors to meld.

Notes

If burrata is too soft to tear, refrigerate for 10 minutes before slicing. Use a light sawing motion when slicing nectarines to preserve their shape. Let the salad rest for 5 minutes before serving to enhance flavor melding. For dairy-free options, substitute burrata with high-quality cashew cheese. Toasted nuts like pine nuts or walnuts can be added for crunch. A drizzle of balsamic glaze can add a tangy-sweet finish.
