Fresh Lemon Herb Grilled Zucchini with Parmesan

A quick and easy grilled zucchini recipe featuring fresh lemon, herbs, and a crispy Parmesan crust, perfect for summer cookouts and light meals.

Ingredients

  • 3 medium zucchinis, sliced lengthwise into 1/4-inch thick strips
  • Juice and zest of 1 lemon
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon fresh thyme leaves
  • 2 cloves garlic, minced
  • 1/3 cup freshly grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Rinse and dry 3 medium zucchinis. Slice them lengthwise into 1/4-inch thick strips.
  2. In a large mixing bowl, combine 2 tablespoons extra virgin olive oil, juice and zest of 1 lemon, 2 tablespoons chopped fresh parsley, 1 tablespoon fresh thyme leaves, and 2 cloves minced garlic. Whisk together until well blended.
  3. Add the sliced zucchini to the bowl and gently toss until every piece is lightly coated. Let it rest for 10 minutes at room temperature to soak in the flavors.
  4. Heat your grill or grill pan to medium-high (about 400°F). If using a charcoal grill, wait until the coals are glowing red with a light layer of ash.
  5. Place zucchini strips on the grill grates perpendicular to avoid slipping through. Grill for 3-4 minutes per side, turning carefully with tongs, until tender with nice grill marks.
  6. During the last minute on the grill, sprinkle about 1/3 cup freshly grated Parmesan evenly over the zucchini. Close the grill lid or cover the pan briefly to let the cheese melt and form a golden crust.
  7. Remove zucchini from the grill and season with salt and freshly ground black pepper to taste. Serve warm, garnished with extra lemon zest or fresh herbs if desired.

Notes

Pat zucchini dry before marinating to avoid sogginess. Use freshly grated Parmesan for best melting and browning. Preheat grill well and avoid overcrowding for even cooking. For dairy-free option, substitute Parmesan with nutritional yeast or toasted almond slivers.
