A quick and easy keto-friendly BLT salad featuring crispy bacon, fresh romaine lettuce, juicy cherry tomatoes, and a silky creamy avocado dressing. Perfect for low-carb meals that are flavorful and satisfying.

  • 6 strips thick-cut bacon
  • 1 large head romaine lettuce, washed and torn into bite-sized pieces
  • 1 cup cherry tomatoes, halved
  • 1 large ripe avocado, peeled
  • 1 small garlic clove, minced
  • 2 tablespoons freshly squeezed lemon juice
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon Dijon mustard (optional)
  • Salt and freshly cracked black pepper, to taste
  • 1 tablespoon chopped fresh parsley or chives (optional)

Instructions

  1. Place the 6 strips of thick-cut bacon in a cold skillet. Turn heat to medium and cook for 8-10 minutes, flipping occasionally, until crispy but not burnt. Remove and drain on paper towels. Let cool, then chop into bite-sized pieces.
  2. While bacon cooks, wash and dry 1 large head of romaine lettuce. Tear leaves into roughly 2-inch pieces and place in a large mixing bowl.
  3. Halve 1 cup of cherry tomatoes and add to the bowl with lettuce.
  4. In a blender or food processor, combine the ripe avocado, minced garlic, lemon juice, olive oil, and Dijon mustard (if using). Blend until smooth and creamy. Season with salt and pepper to taste. If too thick, add a teaspoon of water or more lemon juice to thin slightly.
  5. Pour the dressing over the lettuce and tomatoes. Use salad tongs or two large spoons to gently toss until everything is evenly coated.
  6. Sprinkle the chopped bacon and optional fresh herbs over the top. Lightly toss to distribute.
  7. Serve immediately to enjoy the salad fresh and crisp. Refrigerate leftovers separately and consume within 24 hours.

Notes

Save some bacon fat for cooking eggs or veggies later for extra flavor. If you don’t have a blender, mash avocado with a fork and whisk other dressing ingredients for a chunkier texture. Prepare dressing just before serving to keep it fresh and green. Avoid overdressing to prevent soggy lettuce.
