Fresh Grilled Peach and Burrata Salad with Prosciutto

A quick and easy summer salad featuring grilled peaches, creamy burrata, and salty prosciutto, perfect for backyard barbecues or light dinners.

  • 4 medium fresh ripe peaches, halved and pitted
  • 8 ounces burrata cheese, fresh
  • 68 thin slices prosciutto
  • 4 cups baby arugula
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic glaze (optional)
  • A handful fresh basil leaves, torn
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • 1 teaspoon lemon juice

Instructions

  1. Wash the peaches, then carefully halve and pit them using a sharp knife.
  2. Preheat your grill or grill pan over medium-high heat until hot, about 5 minutes.
  3. Lightly brush the cut sides of the peaches with olive oil to prevent sticking. Place them cut-side down on the grill and grill for 3-4 minutes until char marks appear and peaches soften slightly but remain firm. Flip and grill skin side for another 2 minutes.
  4. While peaches grill, toss baby arugula with 2 tablespoons olive oil, lemon juice, salt, and pepper in a large bowl.
  5. On a serving platter or bowl, spread the dressed arugula evenly. Tear burrata into large chunks and scatter over the greens.
  6. Lay the grilled peach halves on top, skin side down.
  7. Tear prosciutto slices into bite-sized pieces and arrange around the salad. Sprinkle torn fresh basil leaves over everything.
  8. Drizzle about 2 tablespoons balsamic glaze over the salad for a sweet and tangy finish.
  9. Sprinkle flaky sea salt and freshly cracked black pepper to taste. Serve immediately.

Notes

Let burrata sit at room temperature for 10 minutes before serving for creamier texture. Brush peaches with olive oil to prevent sticking and watch grilling time carefully to avoid mushiness. If peaches are not ripe, sprinkle sugar before grilling to enhance sweetness. If no grill is available, roast peaches in a 400°F oven for 10 minutes.
