  • 1 cup strawberries, hulled and quartered
  • 1 cup blueberries (fresh or thawed if frozen)
  • 1 cup pineapple chunks (fresh preferred, canned works in a pinch)
  • 1 mango, peeled and diced
  • 2 kiwis, peeled and sliced
  • 1 cup seedless green grapes, halved
  • 3 tablespoons honey
  • 2 tablespoons fresh lime juice (about 12 limes)
  • 1 teaspoon lime zest
  • 1 tablespoon finely chopped fresh mint leaves (optional)
  • A pinch of sea salt

Instructions

  1. Wash all the fruit thoroughly under cold running water. Hull and quarter the strawberries, peel and dice the mango, slice the kiwis, halve the grapes, and cut the pineapple into bite-sized chunks. Place all the fruit in a large mixing bowl.
  2. In a small bowl, whisk together the honey, fresh lime juice, and lime zest until well combined. Add the finely chopped mint leaves and a pinch of sea salt. Taste and adjust sweetness if needed.
  3. Pour the dressing over the fruit. Using a large spoon or spatula, gently toss the fruit to coat each piece evenly without bruising.
  4. Cover the bowl with plastic wrap or a lid and refrigerate for at least 15 minutes to let the flavors meld. Serve chilled.

Notes

Use firm, ripe fruit for best texture. Toss fruit and dressing separately if preparing ahead to avoid sogginess. Chilling the salad for 15-20 minutes intensifies flavor. Fresh lime juice and zest are preferred for best taste. Optional mint adds a refreshing finish.
