A vibrant and healthy salad featuring roasted beets, creamy feta cheese, mixed greens, and a tangy balsamic dressing. Perfect for light dinners or special occasions.

Ingredients

  • 4 medium-sized beets, peeled and roasted
  • 1/2 cup crumbled feta cheese
  • 4 cups mixed greens (arugula, spinach, kale)
  • 1/2 red onion, thinly sliced
  • 1/2 cup toasted walnuts
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Peel the beets and slice them into wedges. Toss with olive oil, salt, and pepper, then spread them out on a baking sheet. Roast for 25-30 minutes, stirring halfway through, until tender.
  2. In a small bowl, whisk together 3 tablespoons of olive oil, 1 tablespoon of balsamic vinegar, 1 teaspoon of honey, and a pinch of salt and pepper. Adjust the seasoning to your taste.
  3. In a dry skillet over medium heat, toast the walnuts for 2-3 minutes, stirring frequently until fragrant.
  4. In a large mixing bowl, combine the mixed greens, roasted beets, sliced red onion, and toasted walnuts.
  5. Crumble feta cheese over the salad and drizzle the dressing evenly. Toss gently with tongs to combine.
  6. Transfer to a serving platter and enjoy immediately or chill for 10-15 minutes for a slightly cooler, marinated flavor.

Notes

For even cooking, cut the beets into uniform wedges. Taste the dressing before adding it to the salad and adjust the sweetness or tanginess as needed. Dry greens thoroughly to prevent a soggy salad.
