Fresh Cucumber Ranch Crack Salad

A crisp and refreshing salad featuring cucumbers, creamy ranch dressing, crunchy bacon bits, and cheddar cheese. Perfect for any occasion and incredibly easy to make.

Ingredients

  • 2 large cucumbers, sliced thinly and evenly
  • 6 strips of crispy bacon, crumbled
  • 1 cup shredded cheddar cheese
  • ½ cup creamy ranch dressing
  • 2 green onions, chopped (optional, for garnish)
  • Salt and pepper to taste

Instructions

  1. Wash and dry the cucumbers. Slice them thinly into rounds or half-moons, depending on your preference.
  2. Fry the bacon strips in a pan over medium heat until crispy. Drain on paper towels and crumble into small pieces.
  3. In a large mixing bowl, add the cucumber slices, crumbled bacon, shredded cheddar cheese, and chopped green onions (if using).
  4. Pour the ranch dressing over the salad and gently toss to coat all the ingredients evenly.
  5. Finish with a generous pinch of salt and pepper. Taste and adjust seasoning as needed.
  6. Cover the bowl and place the salad in the fridge for at least 10 minutes to let the flavors meld together.
  7. Transfer to a serving dish, garnish with extra green onions if desired, and enjoy!

Notes

If cucumbers are extra watery, sprinkle them with salt and let them sit in a colander for 10 minutes before adding to the salad. Customize the cheese or add diced jalapeños for a spicy kick.
