  • 2 cups (480 ml) full-fat Greek yogurt
  • 1 medium English cucumber, peeled and grated
  • 2 tablespoons fresh dill, finely chopped
  • 1 clove garlic, minced
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon white wine vinegar (optional)
  • Salt to taste (start with ½ teaspoon)
  • Pinch of freshly ground black pepper

Instructions

  1. Strain the Greek yogurt by placing it in a fine mesh sieve lined with cheesecloth or a clean towel over a bowl. Let it drain for at least 30 minutes to remove excess whey.
  2. Peel and grate the cucumber. Place the grated cucumber in a clean kitchen towel and squeeze firmly to remove as much water as possible.
  3. In a mixing bowl, combine the strained yogurt and grated cucumber.
  4. Stir in the chopped fresh dill and minced garlic.
  5. Add fresh lemon juice, white wine vinegar (if using), extra virgin olive oil, salt, and black pepper.
  6. Fold all ingredients together gently to maintain creaminess and texture. Avoid over-mixing.
  7. Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.
  8. Before serving, give the dip a quick stir and adjust salt or lemon juice if needed.

Notes

Straining the yogurt and squeezing out cucumber moisture are key steps to avoid a watery dip. Chill for at least 1 hour for best flavor. Can substitute coconut yogurt for a vegan version. Fresh dill is preferred over dried for best flavor.
