Instructions

  1. Prepare the Tomato Basil Topping: In a medium bowl, combine diced cherry tomatoes, torn basil leaves, and minced garlic. Drizzle 2 tablespoons extra virgin olive oil and 1 teaspoon balsamic vinegar over the mixture. Season with sea salt and black pepper to taste. Toss gently to combine and let sit at room temperature for about 10 minutes.
  2. Make the Balsamic Reduction: Pour 1/2 cup balsamic vinegar into a small saucepan over medium heat. Add 1 teaspoon honey or brown sugar if desired. Bring to a gentle boil, then reduce heat to low and simmer uncovered, stirring occasionally, until thickened to a syrupy consistency (about 10-12 minutes). Remove from heat and let cool slightly.
  3. Toast the Bread: Preheat grill pan or oven broiler. Lightly brush bread slices with olive oil on both sides. Toast until golden and crisp, about 2-3 minutes per side on grill pan or 4-5 minutes under broiler, flipping halfway. Rub cut side of garlic clove over each toasted slice for flavor.
  4. Assemble the Bruschetta: Spoon generous portions of tomato basil mixture onto each toasted bread slice. Drizzle balsamic reduction over the top.
  5. Serve Immediately: Enjoy bruschetta fresh while bread is crisp and topping is juicy. If preparing ahead, keep tomato mixture chilled and assemble just before serving.
