Light, refreshing cucumber roll-ups filled with creamy chicken salad—perfect for snacks, appetizers, or healthy cravings.

  • 2 long English cucumbers or Persian cucumbers
  • 2 cups cooked chicken, shredded or finely chopped
  • 1/3 cup mayonnaise (or Greek yogurt for a lighter version)
  • 1/4 cup celery, finely chopped
  • 2 tablespoons red onion, finely diced
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Wash the cucumbers and use a mandoline or vegetable peeler to slice them lengthwise into thin ribbons. Pat dry with a paper towel to remove excess moisture.
  2. In a mixing bowl, combine the shredded chicken, mayonnaise, celery, red onion, dill, lemon juice, salt, and pepper. Stir until well combined.
  3. Lay a cucumber ribbon flat on a clean surface. Spoon a small amount of chicken salad onto one end of the ribbon. Roll it up carefully, securing with a toothpick if needed.
  4. Repeat until all cucumber ribbons are used up. Arrange the roll-ups on a serving platter.
  5. Refrigerate the roll-ups for 15-20 minutes before serving to set and enhance the flavors.

Notes

Pat cucumber slices dry to prevent soggy roll-ups. Avoid overfilling to keep roll-ups intact. Prepare chicken salad ahead of time for convenience.
