  • 2 ripe peaches, sliced
  • 1 cup fresh blueberries
  • 1/2 cup crumbled feta cheese
  • 4 cups mixed greens (spinach, arugula, or spring mix)
  • 1/3 cup toasted pecans
  • 1/4 cup thinly sliced red onion
  • 2 tablespoons honey
  • 3 tablespoons balsamic vinegar
  • 1/4 cup extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Wash the peaches and blueberries thoroughly. Slice the peaches into thin wedges and set aside. Rinse and dry the salad greens.
  2. Heat a small skillet over medium heat and add the pecans. Stir occasionally until they’re fragrant and slightly browned, about 3-5 minutes. Remove from heat and let cool.
  3. In a small jar or bowl, combine honey, balsamic vinegar, olive oil, and a pinch of salt and pepper. Whisk or shake until emulsified.
  4. In a large salad bowl, layer the mixed greens, sliced peaches, blueberries, red onion, and crumbled feta. Scatter the toasted pecans on top.
  5. Drizzle the honey balsamic dressing over the salad. Start with a little and add more as needed to suit your taste.
  6. Gently toss the salad to combine all the ingredients and ensure that everything is evenly coated in the dressing. Serve immediately.
