  • 1 tablespoon unsalted butter
  • 2 tablespoons whole milk or heavy cream
  • 2 tablespoons fresh chives, finely chopped
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: 1/4 cup grated cheese (cheddar or parmesan)
  • Optional: fresh herbs like parsley or tarragon

Instructions

  1. Crack 4 large eggs into a mixing bowl. Add 2 tablespoons whole milk or heavy cream. Whisk vigorously for 1-2 minutes until smooth and slightly frothy. Season lightly with salt and pepper.
  2. While whisking, finely chop 2 tablespoons of fresh chives and set aside.
  3. Heat an 8-inch non-stick skillet over low to medium-low heat. Add 1 tablespoon unsalted butter and let it melt slowly, swirling to coat the pan evenly. The butter should foam gently but not brown.
  4. Pour the egg mixture into the pan. Let it sit undisturbed for about 20 seconds until edges start to set.
  5. Using a silicone spatula, gently push the eggs from the edges toward the center in slow, sweeping motions every 15-20 seconds.
  6. Cook on low heat until eggs look slightly runny and creamy but not wet, about 3-4 minutes. Remember they will continue cooking off heat.
  7. Just before finishing, sprinkle in the chopped chives and fold gently into the eggs.
  8. Remove the pan from heat while eggs are still soft and glossy. Season with extra flaky salt and black pepper. Serve immediately.

Notes

Cook eggs slowly on low heat for best fluffiness. Remove from heat while still slightly soft to avoid overcooking. Adding cheese is optional and should be stirred in after chives. Use dairy-free milk and olive oil for a dairy-free version. Reheat leftovers gently on stovetop to maintain creaminess.
