  • 2 1/4 teaspoons instant yeast
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 3/4 cup milk, warmed to about 100°F (38°C)
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1/2 cup brown sugar
  • 2 tablespoons ground cinnamon
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk

Instructions

  1. In a large mixing bowl, whisk together the gluten-free flour, sugar, salt, and instant yeast.
  2. Warm the milk to about 100°F (38°C) and pour it into the dry ingredients. Add the softened butter and egg. Mix until a sticky dough forms.
  3. If using a stand mixer, attach the dough hook and knead for 5-7 minutes until the dough is smooth and elastic. If kneading by hand, work the dough on a lightly floured surface for about 10 minutes.
  4. Cover the dough with a clean kitchen towel and let it rise in a warm spot for 30 minutes, or until it doubles in size.
  5. Meanwhile, prepare the filling by mixing the brown sugar and cinnamon in a small bowl.
  6. Once the dough has risen, roll it out into a 12×15-inch rectangle on a floured surface. Spread melted butter evenly over the dough and sprinkle the cinnamon-sugar mixture on top.
  7. Starting with the long side, roll the dough tightly into a log. Use a sharp knife to cut the log into 12 equal pieces.
  8. Place the rolls cut-side up in a greased 9×13-inch baking dish. Cover and let them rise for another 20 minutes.
  9. Preheat your oven to 375°F (190°C). Bake the rolls for 20-25 minutes, or until golden brown.
  10. While the rolls are baking, prepare the glaze by whisking together powdered sugar, vanilla extract, and a splash of milk until smooth.
  11. Once the rolls are out of the oven, drizzle the glaze generously over the top. Serve warm and enjoy!
