  • 2 cups (250g) all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 6 tablespoons (85g) cold unsalted butter, cubed
  • 3/4 cup (180ml) cold whole milk
  • 2 tablespoons honey
  • 3 tablespoons (45g) melted unsalted butter

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together flour, baking powder, and salt.
  3. Cut cold butter into the flour mixture using a pastry cutter or two knives until it resembles coarse crumbs.
  4. Pour in cold milk and gently stir until the dough just comes together; do not overmix.
  5. Drop spoonfuls (about 1/4 cup each) of dough onto the prepared baking sheet, spacing about 2 inches apart.
  6. Bake for 12–15 minutes until tops are golden brown and a toothpick inserted comes out clean.
  7. While baking, mix melted butter with honey to prepare the honey butter glaze.
  8. Brush warm biscuits immediately with honey butter and serve warm.

Notes

Keep butter cold to create flaky biscuits. Do not overmix dough to avoid toughness. Brush honey butter immediately after baking for best flavor. Dough can be refrigerated up to 24 hours before baking.
