  • 5 tablespoons unsalted butter, melted (70g)
  • 2 tablespoons granulated sugar
  • 16 oz (450g) cream cheese, softened
  • ½ cup powdered sugar (60g)

  • 1 teaspoon smoked paprika
  • ½ cup heavy cream (120ml), whipped to soft peaks
  • 1 cup fresh strawberries, chopped (150g)
  • 2 tablespoons granulated sugar
  • 1 teaspoon fresh lemon juice
  • 1 cup fresh blueberries (150g)
  • 2 tablespoons sugar
  • 1 teaspoon lemon juice

Instructions

  1. Prepare the crust: Combine graham cracker crumbs, melted butter, and sugar in a bowl. Stir until crumbs are evenly coated and look like wet sand. Divide the mixture evenly among your jars, pressing down firmly with the back of a spoon to form a compact base. Refrigerate jars while preparing the filling.
  2. Make the smoked white cheesecake layer: Beat softened cream cheese with powdered sugar and vanilla extract using an electric mixer on medium speed until smooth and creamy, about 2-3 minutes. Add smoked paprika and mix just until incorporated. Whip heavy cream to soft peaks and fold gently into the cream cheese mixture. Spoon the white cheesecake layer over the crust in each jar, smoothing the top. Chill jars in the fridge for at least 20 minutes.
  3. Prepare the red berry layer: Toss chopped strawberries with sugar and lemon juice in a small bowl. Let sit for 10 minutes to macerate. Spoon an even layer of the macerated strawberries over the chilled cheesecake layer in each jar. Return jars to the fridge for 10 minutes.
  4. Prepare the blue berry layer: Repeat the maceration process with blueberries, sugar, and lemon juice. After 10 minutes, spoon the blueberries over the strawberry layer gently. Refrigerate jars for at least 1 hour before serving.
  5. Serving: Just before serving, add a few fresh berries or a sprig of mint on top for garnish. Serve chilled directly in jars.

Let cream cheese and heavy cream sit at room temperature for about 30 minutes before mixing to avoid lumps and ensure proper whipping. Fold whipped cream gently into the cream cheese mixture to keep it light and airy. Add smoked paprika gradually to balance smoky flavor. Chill layers between additions to maintain clean, defined layers. If cheesecake layer is too thick, let it sit at room temperature or whisk briefly to loosen. For a less smoky flavor, start with ½ teaspoon smoked paprika. Jars can be prepared up to 24 hours in advance by assembling crust and cheesecake layer; add berry layers just before serving.
