Flavorful Seven Layer Taco Dip Recipe with Easy Fresh Guacamole Tutorial

A quick and easy seven layer taco dip featuring spiced refried beans, fresh guacamole, sour cream, salsa, cheese, and fresh veggies. Perfect for parties, potlucks, or casual gatherings.

  • 1 can (15 oz / 425 g) refried beans
  • 1 tsp taco seasoning
  • 2 ripe avocados, mashed
  • 1 tbsp fresh lime juice
  • 1/4 cup finely diced red onion
  • 1 small tomato, seeded and diced (optional)
  • 1 garlic clove, minced
  • Salt and pepper to taste
  • 1 cup (240 ml) sour cream (or dairy-free coconut yogurt)
  • 1 tsp taco seasoning
  • 1 cup (240 ml) chunky salsa
  • 1 cup (100 g) shredded sharp cheddar cheese
  • 1/2 cup sliced black olives
  • 1/2 cup chopped green onions
  • 1/2 cup diced red bell pepper
  • Fresh cilantro leaves (optional)
  • Jalapeño slices (optional)

Instructions

  1. In a small bowl, mix the refried beans with 1 tsp of taco seasoning until evenly combined. Spread this mixture evenly across the bottom of a 9×13 inch serving dish.
  2. In a medium bowl, mash the ripe avocados with a fork or potato masher until creamy but still a little chunky. Add fresh lime juice, diced red onion, diced tomato (if using), minced garlic, salt, and pepper. Stir gently to combine.
  3. Carefully spoon the guacamole over the bean layer, spreading it evenly with a spatula.
  4. In a small bowl, combine sour cream with 1 tsp taco seasoning. Stir until smooth, then gently spread this over the guacamole layer.
  5. Spoon the chunky salsa evenly over the sour cream layer, spreading gently without mixing.
  6. Evenly distribute shredded cheddar cheese over the salsa layer.
  7. Scatter sliced black olives, chopped green onions, and diced red bell pepper across the cheese layer.
  8. Garnish with fresh cilantro leaves and jalapeño slices on top.
  9. Cover the dish with plastic wrap and refrigerate for at least 30 minutes before serving to let the flavors meld.

Notes

Use ripe but firm avocados to avoid bitterness and browning. Add lime juice early to keep guacamole green. Do not press layers too hard to keep them distinct. Prepare layers ahead but add fresh veggies and garnish just before serving. For vegan version, use dairy-free sour cream and cheese and black beans instead of refried beans. Can warm bean layer before assembling for a warm dip variation.
