Ingredients

Scale
  • 1 ½ pounds ground beef
  • ½ cup breadcrumbs
  • 2 large eggs
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste
  • 8 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 23 jalapenos, finely diced
  • ¼ cup cooked bacon crumbles

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the softened cream cheese, shredded cheddar, diced jalapenos, and bacon crumbles. Mix until fully incorporated and set aside.
  3. In a larger bowl, combine the ground beef, breadcrumbs, eggs, diced onion, minced garlic, Worcestershire sauce, smoked paprika, salt, and pepper. Mix gently but thoroughly.
  4. Flatten half of the meat mixture into a rectangle on a clean surface or baking sheet. Spread the jalapeno popper filling evenly over the meat, leaving half an inch around the edges.
  5. Place the remaining meat mixture on top of the filling and carefully shape it into a loaf, ensuring the edges are sealed.
  6. Transfer the meatloaf to a loaf pan or baking dish and cover with aluminum foil. Bake for 45 minutes.
  7. Remove the foil and bake for an additional 15 minutes to allow the top to brown.
  8. Remove the meatloaf from the oven and let it rest for 10 minutes before slicing.

Notes

[‘Don’t overmix the meat to avoid a dense texture.’, ‘Adjust the spice level by using fewer jalapenos or substituting with sweet peppers.’, ‘Use fresh ingredients for better flavor.’, ‘Test the seasoning by frying a small piece of the meat mixture.’, ‘Let the meatloaf rest after baking to ensure clean slices.’]
