These sliders combine spicy jalapeños, creamy cheese, and tender shredded chicken in soft toasted buns for a quick, crowd-pleasing comfort food perfect for any occasion.

  • 2 cups cooked chicken, shredded (rotisserie chicken works great for ease)
  • 4 oz cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 23 fresh jalapeños, seeded and finely diced
  • 1/4 cup mayonnaise
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and freshly ground black pepper to taste
  • 12 slider buns (soft, slightly sweet buns like Hawaiian rolls)
  • Butter, melted (for brushing the buns before toasting)
  • Optional: sliced pickles or extra jalapeño slices for topping

Instructions

  1. Shred 2 cups of cooked chicken using two forks or your fingers. Dice 2-3 fresh jalapeños finely (remove seeds if you want less heat). Set aside.
  2. In a medium bowl, combine 4 oz softened cream cheese, 1/4 cup mayonnaise, 1 tsp garlic powder, 1/2 tsp smoked paprika, salt, and pepper. Mix until smooth and creamy.
  3. Add the shredded chicken, diced jalapeños, and 1 cup shredded sharp cheddar cheese to the cream cheese mixture. Stir gently until everything is evenly combined. The filling should be moist but not too runny.
  4. Slice the slider buns in half horizontally, but keep them together in a pan or baking dish to assemble. Brush the insides lightly with melted butter for a golden, toasty finish.
  5. Spread the chicken filling evenly across the bottom halves of the buns. If desired, add extra jalapeño slices or pickles on top for crunch and extra zing. Place the top halves of the buns back on.
  6. Preheat your oven to 350°F (175°C). Cover the assembled sliders loosely with foil and bake for 12-15 minutes until warmed through and the cheese is melty. Remove foil in the last 2 minutes for a lightly toasted top.
  7. Let sliders cool just a couple of minutes before serving. They’re best enjoyed warm when the cheese is gooey and the jalapeños are fragrant.

Notes

If the filling looks dry before baking, add a splash of milk or more mayonnaise to loosen it up. Remove jalapeño seeds for less heat or add more for extra spice. Brush buns with melted butter before toasting to prevent sogginess. Cover sliders with foil while baking to keep moist, removing foil near the end to crisp tops.
