  • 1 pound (450g) raw shrimp, medium to large (3140 count), peeled and deveined, tails on
  • 6 tablespoons (85g) unsalted butter, softened
  • 3 cloves fresh garlic, minced
  • 2 tablespoons fresh parsley, finely chopped
  • 1 teaspoon fresh thyme leaves
  • Juice of half a lemon
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • Wooden or metal skewers (soaked in water for 30 minutes if wooden)

Instructions

  1. In a mixing bowl, combine softened butter with minced garlic, chopped parsley, thyme leaves, lemon juice, salt, and black pepper. Mix well until evenly incorporated.
  2. Add peeled and deveined shrimp to the bowl and toss gently to coat each shrimp evenly with the garlic herb butter. Let marinate for 15 to 20 minutes at room temperature.
  3. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  4. Thread 6 to 8 shrimp per skewer, piercing through the thickest part to keep them secure.
  5. Preheat grill to medium-high heat (about 400°F / 200°C). If using charcoal, wait until coals are covered with white ash.
  6. Place shrimp skewers on the grill and cook for 2-3 minutes per side, flipping once, until shrimp turn pink and opaque with some charred edges, about 5-6 minutes total.
  7. Optionally, brush additional garlic herb butter over shrimp just before removing from grill for a glossy finish.
  8. Remove skewers carefully and serve immediately, garnished with extra parsley or lemon wedges if desired.

Notes

Do not marinate shrimp longer than 30 minutes to avoid ‘cooking’ them with lemon juice. Use metal skewers for even heating or soak wooden skewers to prevent burning. Watch grill temperature closely to avoid overcooking. Shrimp cook quickly; total grilling time is about 5-6 minutes.
