Flavorful Grilled Peaches Recipe with Honey Mascarpone and Pistachios

A quick and easy summer dessert featuring smoky grilled peaches topped with honey-sweetened mascarpone and crunchy pistachios. Perfect for warm days and casual gatherings.

  • 4 ripe but firm peaches, halved and pitted
  • 1 cup (240 grams) mascarpone cheese
  • 2 tablespoons honey, plus extra for drizzling
  • 1/4 cup (about 30 grams) chopped pistachios, shelled and roughly chopped
  • 1 teaspoon finely grated lemon zest
  • 1 tablespoon olive oil
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Rinse and dry 4 ripe peaches. Slice each in half and remove the pit. Brush the cut sides lightly with 1 tablespoon olive oil.
  2. Preheat your grill or grill pan over medium-high heat (about 375°F or 190°C).
  3. Place the peaches cut-side down on the grill. Cook for 3-4 minutes without moving to get grill marks.
  4. Flip and grill the skin side for another 2 minutes until peaches are tender but hold their shape.
  5. While peaches grill, combine 1 cup mascarpone cheese, 2 tablespoons honey, and 1 teaspoon lemon zest in a small bowl. Stir gently until smooth.
  6. Arrange grilled peaches on plates, cut side up. Spoon or pipe honey mascarpone over each peach half.
  7. Sprinkle 1/4 cup chopped pistachios over the mascarpone and drizzle extra honey on top.
  8. Garnish with fresh mint leaves and serve immediately while warm.

Notes

If peaches are too firm, let them sit out for 15-20 minutes before grilling to soften. Prepare mascarpone mixture in advance and bring to room temperature before serving. For nut-free version, omit pistachios or substitute with toasted coconut flakes. If no grill is available, roast peaches at 425°F (220°C) for about 10 minutes.
