A quick and easy grilled corn on the cob recipe featuring a zesty cilantro lime butter that adds fresh, tangy flavor perfect for summer BBQs.

  • 4 ears fresh corn on the cob, husks removed
  • 1/2 cup (113 g) unsalted butter, softened
  • 1/4 cup fresh cilantro, finely chopped
  • Juice of 1 large lime (about 2 tablespoons)
  • Zest of 1 lime
  • 1 small garlic clove, minced (optional)
  • 1/2 teaspoon salt, adjust to taste
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. In a medium bowl, combine softened unsalted butter, finely chopped cilantro, fresh lime juice, lime zest, minced garlic (if using), salt, and freshly ground black pepper. Mix thoroughly until evenly incorporated.
  2. Preheat grill to medium-high heat, about 375–400°F (190–204°C).
  3. Remove husks and silk from the ears of corn. Pat dry to ensure butter sticks well. Optionally, wrap each ear loosely in foil for softer texture.
  4. Place corn directly on grill grates. Turn every 3–4 minutes to get even char marks on all sides, grilling for about 15 minutes until kernels are tender and slightly browned.
  5. Remove corn from heat and immediately spread cilantro lime butter generously over each ear, allowing residual heat to melt the butter.
  6. Serve warm, optionally garnished with extra chopped cilantro or a sprinkle of chili powder.

Notes

If butter firms before serving, stir to soften. For a hybrid texture, grill corn with husks on for 10 minutes then peel back to char. Fresh lime juice and zest are essential for bright flavor. Can substitute parsley for cilantro or vegan butter/coconut oil for dairy-free version. Adding smoked paprika or chili powder to butter adds smoky heat.
