Instructions

  1. Place 12 large eggs in a medium saucepan and cover with cold water by about 1 inch. Bring to a boil over medium-high heat, then cover, turn off the heat, and let sit for 12 minutes.
  2. Drain and transfer eggs to a bowl of ice water to cool completely, about 10 minutes.
  3. Gently tap each egg on the counter to crack the shell and peel under running water. Slice each egg in half lengthwise and carefully remove yolks into a mixing bowl. Arrange egg whites on a serving plate.
  4. Mash the yolks with a fork or potato masher until crumbly but smooth enough to scoop.
  5. Add shredded chicken, buffalo sauce, mayonnaise, blue cheese crumbles, diced celery, chopped chives, garlic powder, smoked paprika, salt, and pepper to the mashed yolks.
  6. Stir all ingredients until thoroughly combined and creamy, but still with some texture from the chicken and celery. Taste and adjust seasoning or buffalo sauce as needed.
  7. Using a spoon or piping bag, fill each egg white half generously with the buffalo chicken yolk mixture.
  8. Top each filled egg with extra blue cheese crumbles and a sprinkle of chopped chives for garnish.
  9. Refrigerate the deviled eggs for at least 30 minutes before serving to allow flavors to meld and filling to firm up.
