Easy Yaki Udon Noodles Recipe Perfect for Weeknight Dinners

A quick and flavorful stir-fried noodle dish featuring chewy udon noodles, tender-crisp vegetables, and a savory-sweet sauce, perfect for busy weeknight dinners.

Ingredients

  • 12 ounces udon noodles (fresh or frozen)
  • 1 medium onion, sliced
  • 1 medium carrot, sliced
  • 1 cup cabbage, sliced
  • 2 scallions, sliced
  • 1 cup protein (chicken, beef, shrimp, or tofu)
  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons oyster sauce (or vegetarian oyster sauce)
  • 1 tablespoon mirin
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Optional toppings: sesame seeds, chili flakes, nori strips

Instructions

  1. Cook the udon noodles according to package instructions. Drain and set aside.
  2. Slice the onion, carrots, cabbage, and scallions into thin strips. Mince the garlic and ginger. Cut protein into bite-sized pieces if using.
  3. In a small bowl, mix soy sauce, oyster sauce, mirin, and sesame oil to make the sauce. Set aside.
  4. Heat a large skillet or wok over medium-high heat. Add a drizzle of oil and let it heat up.
  5. Add the protein to the skillet and stir-fry until cooked through. Remove and set aside.
  6. Add more oil to the skillet, then sauté garlic and ginger until fragrant, about 30 seconds. Add the sliced vegetables and stir-fry until tender-crisp, about 3-4 minutes.
  7. Return the protein to the skillet, add the cooked udon noodles, and pour the sauce over everything. Toss until the noodles are evenly coated and heated through.
  8. Garnish with sesame seeds, chili flakes, or nori strips, and serve hot.
