These Easy Turkey Pinwheel Pickle Wraps are a quick and delicious snack or lunchbox idea, made with creamy ranch spread, savory turkey, and tangy pickles. Ready in just 15 minutes, they’re perfect for busy days and crowd-pleasing parties.

Ingredients

Scale
  • 4 large flour tortillas (10-inch)
  • 8 oz cream cheese, softened to room temperature
  • 1/2 cup sour cream
  • 1 packet ranch seasoning mix (1 oz)
  • 1/2 lb deli turkey breast, thinly sliced
  • 1/2 cup dill pickle spears, patted dry and cut into thin strips
  • 1/4 cup shredded cheddar cheese (optional)
  • Fresh spinach leaves (optional)

Instructions

  1. Soften the cream cheese: Take cream cheese out of fridge 20 minutes before starting, or microwave in 10-second bursts until softened.
  2. Make the spread: In a small bowl, combine softened cream cheese, sour cream, and ranch seasoning. Mix until smooth.
  3. Prep tortillas: Lay tortillas on cutting board and let sit at room temperature for 5 minutes.
  4. Spread cream cheese mixture: Spread an even layer (about 1/8 inch) over each tortilla, leaving a 1-inch border around edges.
  5. Layer turkey: Place turkey slices evenly over cream cheese, overlapping slightly.
  6. Add pickles and extras: Lay pickle strips along one edge of tortilla. Add cheese and spinach if using.
  7. Roll tightly: Starting from the edge with pickles, roll tortilla tightly but gently, like rolling a sleeping bag.
  8. Wrap and chill: Wrap each roll tightly in plastic wrap and refrigerate for at least 30 minutes (or 15 minutes in freezer).
  9. Slice: Unwrap rolls, slice off ends, then slice into 1-inch pinwheels using a serrated knife with a gentle sawing motion.
  10. Arrange and serve: Arrange on platter or pack into lunchboxes.

Notes

Pat pickles dry to prevent sogginess. Use room temperature ingredients for best results. Chill time is essential for clean slicing. Can be made a day ahead. Store in airtight container in fridge for up to 3 days. Do not freeze.
