  • 1/4 cup liquid honey
  • 4 to 5 cloves garlic, minced
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon olive oil
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon salt
  • Optional: fresh thyme or rosemary for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Trim the pork tenderloin by removing any silver skin or excess fat.
  3. Season the pork with salt and freshly ground black pepper all over.
  4. Heat olive oil in an ovenproof skillet over medium-high heat until shimmering.
  5. Sear the pork tenderloin on all sides for 2 to 3 minutes per side until golden brown.
  6. While searing, whisk together honey, minced garlic, soy sauce, and apple cider vinegar in a small bowl.
  7. Reduce heat to medium, pour the glaze over the pork, and spoon some back over the top.
  8. Transfer the skillet to the oven and roast for 15 to 20 minutes, spooning glaze over the pork once or twice during cooking. Use a meat thermometer to check for an internal temperature of 145°F (63°C).
  9. Remove the pork from the oven and let it rest on a cutting board for 5 to 10 minutes.
  10. Slice the tenderloin into 1/2-inch slices, spoon extra glaze from the pan over the top, and serve.

Notes

Do not skip resting the pork after roasting to keep it juicy. Watch the glaze carefully during roasting to prevent burning; add a splash of water if it thickens too fast. Use a meat thermometer to ensure perfect doneness at 145°F (63°C). Fresh garlic is preferred for best flavor. For gluten-free, substitute soy sauce with tamari or coconut aminos.
