Instructions

  1. Preheat your oven to 225°F (110°C) and line two baking sheets with parchment paper or silicone mats.
  2. Separate 4 large eggs, ensuring no yolk gets into the whites. Let the whites come to room temperature (about 20 minutes).
  3. In a clean mixing bowl, add egg whites and 1/4 teaspoon cream of tartar. Begin whipping on medium speed until soft peaks form.
  4. Gradually add 1 cup (200g) granulated sugar, about one tablespoon at a time, while continuing to beat on high speed until stiff peaks form.
  5. Mix in 1/2 teaspoon vanilla extract just until combined.
  6. Transfer the meringue to a piping bag fitted with your favorite tip. Pipe small kiss shapes, about 1 inch (2.5 cm) in diameter, spaced about 1 inch apart.
  7. Sprinkle the tops generously with colored sparkling sugar.
  8. Bake in the preheated oven for 45–60 minutes until dry and crisp but not browned.
  9. Turn off the oven and let the meringues cool inside for another hour.
  10. Once cooled, carefully peel the meringues off the parchment and store them in an airtight container.
