Instructions

  1. In a mixing bowl, whisk together honey, low sodium soy sauce, sesame oil, minced garlic, grated fresh ginger, and rice vinegar. Set aside.
  2. Place chicken thighs or breasts in the slow cooker.
  3. Pour the sauce over the chicken, ensuring each piece is well coated.
  4. Cover and cook on low for 4 to 5 hours, or until chicken reaches an internal temperature of 165°F and is tender enough to shred.
  5. About 15 minutes before serving, mix cornstarch with cold water to make a slurry. Stir into the slow cooker and turn heat to high. Let the sauce thicken for 10-15 minutes.
  6. Sprinkle toasted sesame seeds and sliced green onions over the chicken before serving.
