These Easy Sheet Pan Sausage and Pepper Tailgate Sandwiches are a one-pan wonder ready in under 40 minutes. Perfect for game days, potlucks, or lazy dinners, they feature juicy Italian sausages roasted with caramelized peppers and onions on a single sheet pan for minimal cleanup and maximum flavor.

  • 6 Italian sausage links (about 1.5 pounds, sweet or hot)
  • 3 bell peppers (mix of red, yellow, and orange)
  • 2 medium yellow onions, sliced into 1/2-inch thick wedges
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons balsamic vinegar
  • 6 hoagie rolls or sub rolls
  • 6 slices provolone cheese
  • 2 tablespoons butter, softened
  • Optional toppings: giardiniera, hot peppers, or balsamic glaze

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or aluminum foil.
  2. Wash bell peppers and slice into 1/2-inch thick strips. Peel onions and cut into 1/2-inch thick wedges, separating layers slightly.
  3. In a large mixing bowl, combine sliced peppers and onions with olive oil, dried oregano, garlic powder, smoked paprika, salt, and pepper. Toss until coated.
  4. Spread seasoned peppers and onions in an even layer on the prepared baking sheet. Nestle Italian sausage links on top of the vegetables, spacing evenly.
  5. Roast for 20 minutes. Remove from oven, flip sausages with tongs, and stir peppers and onions. Return to oven and roast for another 10-15 minutes until sausages are browned and cooked through (internal temperature 160°F/71°C) and peppers are tender with slightly charred edges.
  6. During the last 5 minutes of roasting, drizzle balsamic vinegar over the peppers and onions.
  7. While sausage and peppers finish roasting, split hoagie rolls open and spread cut sides with softened butter. Heat a skillet or griddle over medium heat and toast rolls cut side down until golden brown, about 2-3 minutes.
  8. Place a slice of provolone cheese on the bottom half of each toasted roll. Pile roasted peppers and onions onto the cheese. Top with a sausage link (slice in half lengthwise if desired). Add optional toppings. Close sandwich and press down gently.
  9. Serve immediately while hot.

Notes

Pat sausages dry before roasting for better browning. Do not overcrowd the pan; use two sheet pans if doubling the recipe. Let sausages rest for 5 minutes after roasting. Toasting the rolls prevents sogginess. Leftover sausage and pepper mixture can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
