These colorful, creamy, and crunchy pinwheels are the perfect lunchbox snack. Made with a seasoned cream cheese and ranch filling, packed with finely chopped bell peppers and carrots, they’re fun to eat and secretly full of good stuff.

  • 4 large flour tortillas (burrito size; use gluten-free if needed)
  • 8 oz cream cheese, softened to room temperature
  • 1/2 cup ranch dressing
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup finely chopped red bell pepper
  • 1/4 cup finely chopped orange bell pepper
  • 1/4 cup finely chopped yellow bell pepper
  • 1/4 cup finely chopped green bell pepper (or broccoli florets)
  • 1/4 cup shredded carrots
  • 2 tablespoons finely chopped fresh chives or green onions (optional)
  • Salt and black pepper to taste

Instructions

  1. Soften the cream cheese: Take it out of the fridge about 30 minutes before starting, or microwave for 10-15 seconds until soft but not melted.
  2. Make the ranch filling: In a medium bowl, combine softened cream cheese, ranch dressing, and shredded cheddar. Mix until smooth and well combined. Season with a pinch of salt and pepper.
  3. Prep the veggies: Finely chop all bell peppers into small pieces (size of small peas). Shred carrots if not already done.
  4. Mix it all together: Fold chopped veggies and chives into the cream cheese mixture until every piece is coated.
  5. Warm the tortillas: Microwave each tortilla for about 10 seconds to make them more pliable.
  6. Spread the filling: Lay a tortilla flat. Spoon about 1/4 of the filling onto the center and spread evenly across the entire surface, leaving a 1/2-inch border around the edges.
  7. Roll it up tight: Starting from one edge, roll the tortilla as tightly as possible without tearing. Use fingers to tuck and hold filling in as you go.
  8. Wrap and chill: Wrap each rolled tortilla tightly in plastic wrap. Refrigerate for at least 1 hour (or overnight).
  9. Slice into pinwheels: Once chilled, unwrap rolls and use a serrated knife to slice into 1-inch thick rounds using a gentle sawing motion. You should get about 6-8 pinwheels per tortilla.
  10. Serve or store: Arrange pinwheels on a plate or pack directly into lunchboxes.

Notes

Chop veggies very small (confetti size) to prevent tearing tortillas. Chilling is essential for clean slices. Use full-fat cream cheese for best texture. Pat veggies dry to avoid sogginess. For dairy-free, use plant-based cream cheese and dairy-free ranch.
