Ingredients

Scale
  • 1 pound strawberries, hulled and halved (or quartered if large)
  • 2 medium navel oranges, peeled and cut into 1-inch chunks
  • 1 small pineapple (or 2 cups pre-cut chunks), cut into 1-inch chunks
  • 1 cup seedless green grapes
  • 1 cup fresh blueberries
  • 1 cup seedless purple grapes
  • 1 cup plain Greek yogurt (full-fat or 2%)
  • 3 tablespoons honey, plus more to taste
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon fresh lemon juice (optional)

Instructions

  1. Wash all fruit thoroughly under cool running water and pat dry with a clean kitchen towel or paper towels.
  2. Hull the strawberries by cutting off the green tops and any white part underneath. Cut each strawberry in half lengthwise, or quarter them if large.
  3. Peel the oranges, slice into rounds about 1/2-inch thick, then cut each round into quarters.
  4. Cut the pineapple into 1-inch chunks, removing any brown spots or eyes.
  5. Leave the grapes whole.
  6. In a small mixing bowl, combine 1 cup Greek yogurt, 3 tablespoons honey, and 1 teaspoon vanilla extract. Whisk until smooth and creamy. Taste and adjust sweetness or tanginess with additional honey or lemon juice if desired. Cover and refrigerate while assembling kabobs.
  7. Arrange the fruit in rainbow order: strawberries (red), oranges (orange), pineapple (yellow), green grapes (green), blueberries (blue), purple grapes (purple).
  8. Take a wooden skewer and start with a strawberry piece, pushing it down about 1 inch from the pointed end. Follow with an orange piece, pineapple, green grape, a few blueberries, and finish with a purple grape. Leave about 1 inch of space at the bottom for handling.
  9. Repeat with remaining skewers, spacing fruit snugly but not squished. Aim for 6-7 pieces per skewer.
  10. Place finished kabobs on a serving platter in a single layer, fanning them out like a rainbow or arranging in rows. Place the bowl of honey yogurt dip in the center or at one end. Garnish with fresh mint leaves if desired.
  11. Serve immediately, ideally within an hour of assembly.

Notes

For best results, use ripe but firm fruit. Pat fruit dry before skewering to prevent dip from sliding off. The dip can be made a day ahead and refrigerated. For a vegan version, use dairy-free yogurt and maple syrup instead of honey. For a low-sugar version, skip the honey in the dip and use plain yogurt with a pinch of stevia.
