A savory, creamy, and cheesy bacon cheeseburger casserole that’s low-carb and keto-friendly, perfect for a quick and hearty meal.

  • 1 lb ground beef (80/20 lean-to-fat ratio)
  • 6 slices thick-cut bacon, pre-cooked and chopped
  • 8 oz cream cheese, softened
  • 2 cups shredded cheddar cheese
  • 4 large eggs, room temperature
  • ½ cup heavy cream (120 ml), full-fat
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Salt to taste
  • ½ tsp freshly ground black pepper
  • 1 tsp Dijon mustard (optional)
  • 2 tbsp finely chopped green onions or chives

Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking dish with parchment paper or lightly grease it to prevent sticking.
  2. Cook the bacon in a large skillet over medium heat until crispy, about 6-8 minutes. Transfer to a paper towel-lined plate to drain, then chop into bite-sized pieces. Keep about 2 tablespoons for topping later.
  3. Using the same skillet (remove some bacon grease if there’s too much), add the ground beef and cook over medium-high heat until browned and no longer pink, about 7-10 minutes. Break up any clumps with a spatula.
  4. Carefully drain fat from the skillet to avoid a greasy casserole. Return beef to heat and stir in onion powder, garlic powder, salt, pepper, and Dijon mustard. Mix well and remove from heat.
  5. In a medium bowl, microwave cream cheese for about 20 seconds or until soft enough to stir easily. Whisk in heavy cream until smooth.
  6. In a separate bowl, beat the eggs lightly, then mix into the cream cheese and cream mixture until fully blended.
  7. Add the cooked ground beef and 1½ cups (150 g) of shredded cheddar cheese to the cream mixture. Stir gently to combine everything evenly.
  8. Pour the mixture into your prepared baking dish, spreading it out evenly. Sprinkle the reserved bacon pieces and remaining shredded cheddar evenly on top.
  9. Place in the oven and bake for 25-30 minutes, or until the casserole is set (a knife inserted should come out mostly clean) and the cheese on top is bubbly and golden.
  10. Remove from oven and let it sit for 5-10 minutes to firm up. Sprinkle chopped green onions or chives over the top before serving.

Notes

If cheese browns too fast, tent casserole loosely with foil. Let casserole rest longer if watery after baking. Use room temperature eggs and cream cheese for smooth texture. Drain excess fat from beef and bacon to avoid greasiness. Can add veggies like bell peppers or mushrooms for variation. Microwave bacon cooker can save time.
