  • 8 ounces ground beef (80/20 preferred)
  • 1 tablespoon olive oil
  • 2 teaspoons taco seasoning (homemade or store-bought)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder (optional)
  • 1/2 cup diced cherry tomatoes (about 75 g)
  • 1/2 cup shredded cheddar cheese (about 60 g)
  • 2 tablespoons sour cream
  • 2 tablespoons fresh cilantro, chopped
  • 1 teaspoon fresh lime juice
  • Salt and black pepper to taste

Instructions

  1. Slice the avocados in half lengthwise and carefully remove the pits. Using a spoon, gently scoop out about 1 tablespoon of flesh from each half to create a small cavity for the filling. Set aside.
  2. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Add the ground beef and break it up with a spatula as it cooks. Stir frequently to ensure even browning (about 7-8 minutes).
  3. Once the beef is mostly cooked through, add 2 teaspoons taco seasoning, 1/2 teaspoon garlic powder, and 1/2 teaspoon onion powder. Stir well to coat all the meat evenly. Add 1-2 tablespoons of water if the mixture feels dry. Cook for another 2 minutes until fragrant.
  4. Remove the skillet from heat. Stir in the diced cherry tomatoes and 1 teaspoon fresh lime juice. Season with salt and pepper to taste. Let the filling cool slightly.
  5. Spoon the beef mixture generously into each avocado half. Top with shredded cheddar cheese. For melted cheese, place under a broiler for 1-2 minutes, watching closely.
  6. Dollop sour cream over the top and sprinkle with chopped cilantro. Serve immediately. Optionally, squeeze extra lime juice for brightness.

Choose slightly ripe but firm avocados to hold shape. Avoid overcrowding the pan when browning beef to ensure proper browning. Add taco seasoning midway through cooking for best flavor. Keep sour cream and cilantro toppings cool and add last to maintain freshness. If filling seems dry, add a splash of water. For dairy-free, substitute cheese and sour cream with vegan alternatives.
