This easy honey garlic crockpot pork tenderloin delivers tender, juicy meat coated in a sticky-sweet honey garlic glaze. Perfect for busy weeknights, it requires minimal prep and slow cooks to perfection.

Ingredients

Scale
  • 1.5 to 2 pounds pork tenderloin (700-900g)
  • 1/4 cup honey (85g)
  • 1/4 cup soy sauce (60ml), low-sodium recommended
  • 4 cloves garlic, minced
  • 1 tablespoon apple cider vinegar (15ml)
  • 1 tablespoon olive oil (15ml)
  • 1/2 teaspoon freshly ground black pepper
  • Optional garnishes: chopped fresh parsley or green onions

Instructions

  1. Trim the pork tenderloin by removing any silver skin or excess fat with a sharp knife (about 5 minutes).
  2. In a medium bowl, whisk together honey, soy sauce, apple cider vinegar, minced garlic, olive oil, and black pepper until smooth and aromatic (3 minutes).
  3. Place the trimmed pork tenderloin into the crockpot base. Pour the honey garlic sauce evenly over the pork, coating all sides. Marinate for 15-30 minutes if possible (5 minutes).
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours until the pork reaches an internal temperature of 145°F (63°C). Avoid opening the lid frequently.
  5. About 30 minutes before the end of cooking, check the internal temperature with a meat thermometer. If desired, remove the pork and set the crockpot to high to reduce the sauce for 10-15 minutes (5-10 minutes).
  6. Remove the pork and let it rest for 5-10 minutes before slicing against the grain into 1/2-inch (1.3 cm) thick pieces (10 minutes).
  7. Serve slices drizzled with extra sauce and garnish with chopped parsley or green onions. Pair with mashed potatoes, steamed vegetables, or a light salad.

Notes

Trimming silver skin improves texture and sauce absorption. Marinate pork in sauce for 15-30 minutes if possible. Use a meat thermometer to ensure pork reaches 145°F for safety and juiciness. Optionally sear pork before slow cooking for added flavor. Reduce leftover sauce on high heat for a thicker glaze. Substitute tamari for soy sauce to make gluten-free. Add red pepper flakes for a spicy kick.
