A quick and wholesome flatbread pizza crust made with just cottage cheese, eggs, and oats, offering a high-protein, fuss-free alternative to traditional pizza dough.

  • 1 cup (225g) cottage cheese (full-fat or low-fat, small-curd preferred)
  • 2 large eggs (room temperature)
  • ½ cup (45g) old-fashioned rolled oats
  • Pinch of salt (optional)
  • Dried herbs like oregano or Italian seasoning (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone mat.
  2. If desired, pulse the rolled oats in a food processor or blender for 15-20 seconds until coarse flour for a smoother crust.
  3. In a mixing bowl, combine cottage cheese, eggs, and ground oats. Add salt and dried herbs if using. Stir until uniform and spreadable.
  4. Spread the batter evenly on the prepared baking sheet into a ¼-inch (6mm) thick round or rectangular shape, keeping edges slightly thicker.
  5. Bake the crust for 20-25 minutes until lightly golden and firm to the touch. If still jiggly, bake a few more minutes.
  6. Add your favorite toppings and bake for an additional 8-10 minutes until toppings are bubbly and golden.
  7. Let the flatbread cool for a couple of minutes before slicing to help it hold together.

Notes

Blending the oats creates a dough-like consistency that holds better. Use parchment paper to prevent sticking. Let the crust rest before slicing. For a crisper base, flip the crust onto a hot pizza stone halfway through baking. Avoid watery toppings to prevent sogginess. Can be cooked on stovetop in a non-stick skillet over medium-low heat for 5 minutes per side as an alternative.
