These Asian turkey lettuce wraps are quick, healthy, and bursting with flavor, perfect for busy weeknights or light meals. They combine lean ground turkey with fresh veggies and a savory-sweet soy-ginger sauce wrapped in crisp lettuce leaves.

  • 1 pound lean ground turkey (93% lean preferred)
  • 1 head green leaf lettuce (butter lettuce or Bibb preferred)
  • 1 medium carrot, finely shredded
  • 1 small red bell pepper, diced
  • 2 green onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon rice vinegar
  • ½ teaspoon chili garlic sauce (optional)
  • 1 tablespoon vegetable or canola oil
  • Optional garnishes: chopped cilantro, toasted sesame seeds, crushed peanuts

Instructions

  1. Carefully separate the lettuce leaves and rinse under cold water. Pat dry with paper towels or use a salad spinner. Set aside on a plate lined with a clean kitchen towel to keep crisp.
  2. In a small bowl, combine soy sauce, hoisin sauce, toasted sesame oil, rice vinegar, and optional chili garlic sauce. Whisk until smooth and set aside.
  3. Grate the carrot and ginger, mince the garlic, dice the bell pepper, and slice the green onions.
  4. Heat vegetable oil in a large skillet or wok over medium-high heat. Add ground turkey and break apart with a wooden spoon. Cook until no longer pink, about 5-6 minutes, stirring frequently.
  5. Add minced garlic and grated ginger to the turkey. Stir constantly for about 1 minute until fragrant.
  6. Stir in shredded carrot, diced bell pepper, and most of the green onions (reserve some for garnish). Cook for 2-3 minutes until veggies soften slightly but remain crunchy.
  7. Pour the prepared sauce over the turkey and vegetables. Stir well to coat evenly. Cook for another 2 minutes to meld flavors and thicken sauce. Add a splash of water if mixture looks dry.
  8. Taste and adjust seasoning if needed with salt or more soy sauce.
  9. Spoon turkey mixture into prepared lettuce leaves. Garnish with reserved green onions, cilantro, sesame seeds, or crushed peanuts. Serve immediately.

Notes

Keep heat medium-high but not too hot to avoid drying out the turkey. Stir frequently to lock in moisture. Use fresh ginger and garlic for best flavor. Prepare veggies ahead to save time. Adjust seasoning to taste before serving. For gluten-free, substitute tamari for soy sauce and check hoisin sauce ingredients.
