  • 2 pounds boneless, skinless chicken thighs
  • 2 cups low sodium chicken broth
  • 1 cup heavy cream (full-fat)
  • 4 ounces cream cheese, softened
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • Salt to taste (start with 1 teaspoon)
  • Black pepper to taste (start with 1/2 teaspoon)
  • 1 tablespoon olive oil or avocado oil (optional, for searing)
  • Chopped fresh parsley (optional, for garnish)

Instructions

  1. Pat the chicken thighs dry with paper towels.
  2. Season both sides with garlic powder, onion powder, dried thyme, paprika, salt, and pepper.
  3. Optional: Heat oil in a skillet over medium-high heat and sear chicken thighs 2-3 minutes per side until golden brown.
  4. Place the seasoned (and seared if done) chicken thighs into the crockpot.
  5. Pour the chicken broth over the chicken.
  6. Cover and cook on low for 4 hours or until chicken reaches an internal temperature of 165°F (74°C).
  7. About 30 minutes before the end of cooking, soften the cream cheese in a bowl and whisk in the heavy cream until smooth. Add a pinch of salt and pepper if desired.
  8. Pour the cream cheese and heavy cream mixture into the crockpot and stir gently to combine.
  9. Cover and cook for an additional 20-30 minutes on low to thicken the gravy and meld flavors.
  10. Taste and adjust seasoning. If gravy is too thin, gradually stir in a small pinch of xanthan gum until desired thickness is reached.
  11. Sprinkle chopped fresh parsley over the top for garnish.
  12. Serve warm, spooned over mashed cauliflower or steamed low-carb vegetables.

Notes

Searing the chicken before slow cooking adds flavor but is optional. Use xanthan gum to thicken gravy without adding carbs. If gravy separates, whisk vigorously to recombine. Adjust seasoning carefully as broth and cream cheese add saltiness. Leftovers keep well refrigerated for up to 4 days; reheat gently.
