A quick and easy sheet pan dinner with smoked sausage, baby potatoes, bell peppers, and red onion, all roasted together in 30 minutes for a flavorful, no-fuss weeknight meal.

  • 1214 ounces smoked sausage, sliced into 1/2-inch rounds
  • 1 pound baby potatoes, halved or quartered
  • 2 medium bell peppers (any color), cut into 1-inch chunks
  • 1 medium red onion, cut into 1-inch wedges
  • 23 tablespoons olive oil
  • 34 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper, freshly ground
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Place your sheet pan in the oven while it preheats.
  2. Wash and dry the baby potatoes. Cut them in half (or quarters if larger). Cut the bell peppers into 1-inch chunks. Cut the red onion into 1-inch wedges. Place everything in a large mixing bowl.
  3. Slice the smoked sausage into 1/2-inch rounds. Add them to the bowl with the vegetables.
  4. Drizzle the olive oil over the sausage and vegetables. Add the minced garlic, dried oregano, smoked paprika, salt, and black pepper. Toss well until everything is evenly coated.
  5. Carefully remove the preheated sheet pan from the oven. Spread the sausage and vegetable mixture in a single, even layer.
  6. Roast for 20 minutes. At the halfway point (10 minutes), stir everything with a spatula to ensure even browning.
  7. Check for doneness: potatoes should be fork-tender and golden brown, sausage caramelized on edges, peppers and onions softened and slightly charred.
  8. Sprinkle fresh parsley over the top and serve immediately.

Notes

Preheating the sheet pan is key for crispy potatoes. Cut all ingredients to uniform size for even cooking. For extra crispy sausage, broil for the last 2-3 minutes. If using leaner sausage (chicken/turkey), add an extra tablespoon of olive oil. Leftovers keep in the refrigerator for up to 3 days; reheat in a 350°F oven for 10 minutes or in a skillet.
