  • 10 ounces mini marshmallows (about 280g)
  • 6 cups Lucky Charms cereal (about 180g)
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1 cup mini marshmallows (about 30g) for swirls (optional extra)

Instructions

  1. Line a 9×13 inch baking pan with wax paper or parchment paper, leaving some overhang for easy removal.
  2. In a large saucepan over low heat, melt 6 tablespoons (85g) of unsalted butter until fully liquid but not browned.
  3. Add 10 ounces (about 280g) of mini marshmallows and stir continuously until melted and smooth, about 5 minutes.
  4. Remove from heat and stir in 1 teaspoon vanilla extract and a pinch of salt.
  5. Immediately add 6 cups (about 180g) of Lucky Charms cereal and stir gently to coat without crushing the cereal.
  6. Fold in an additional 1 cup (about 30g) of mini marshmallows for marshmallow swirls.
  7. Pour the mixture into the prepared pan and press evenly and gently with a buttered spatula or wax paper.
  8. Let the treats cool at room temperature for at least 1 hour until set (or refrigerate for 30 minutes to speed up).
  9. Lift the treats out using the parchment paper overhang and cut into squares or shapes. Serve immediately or store.

Notes

Use low heat to melt marshmallows slowly to avoid burning. Butter your utensils to prevent sticking. Do not press the mixture too hard to keep treats light and crispy. Work quickly when mixing and pressing the cereal. For gluten-free, verify Lucky Charms packaging. For dairy-free/vegan, use vegan butter and gelatin-free marshmallows.
